Camp Oven Damper

Serves: approx. 4 people

Classic Damper

Ingredients:

  • 4 cups of self-raising flour

  • 2 Tbs powered milk

  • 2 tsp baking powder

  • 1 tsp sugar

  • 1 tsp salt

  • 500ml water

Method:

  • Add all dry ingredients in a bowl

  • Mix to combine

  • Add 500ml water and mix well

  • Remove coals from fire to the side for the damper to cook on

  • Place trivet inside camp oven

  • Scrunch up some baking paper and line the top of your trivet inside the camp oven

  • Place mixture on top of baking paper

  • Place camp oven on coals and cook for approx 10 minutes

  • Add coals to top of camp oven lid and cook for approx 30 minutes or until golden brown

  • Remove damper from camp oven to a chopping board

  • Slice damper and enjoy!

Tips & Hints:

  • Damper is cooked when it sounds hollow when tapped

  • Spread damper with soften butter and any topping you desire (golden syrup, hot honey - see recipe, jam etc.)

  • Why not turn it into lunch and make it a gourmet sandwich or dip it into soup on those chilly days

Rosemary and Olive Damper

Ingredients:

  • 4 cups of self-raising flour

  • 2 Tbs powered milk

  • 2 tsp baking powder

  • 1 jar olives, chopped

  • 3 sprigs of fresh rosemary, leaves removed

  • Salt & pepper to season

  • 500ml water

Method:

  • Add all dry ingredients in a bowl

  • Mix to combine

  • Add 500ml water and mix well

  • Remove coals from fire to the side for the damper to cook on

  • Place trivet inside camp oven

  • Scrunch up some baking paper and line the top of your trivet inside the camp oven

  • Place mixture on top of baking paper

  • Place camp oven on coals and cook for approx 10 minutes

  • Add coals to top of camp oven lid and cook for approx 30 minutes or until golden brown

  • Remove damper from camp oven to a chopping board

  • Slice damper and enjoy!
