Camp Oven Damper
Serves: approx. 4 people
Classic Damper
Ingredients:
4 cups of self-raising flour
2 Tbs powered milk
2 tsp baking powder
1 tsp sugar
1 tsp salt
500ml water
Method:
Add all dry ingredients in a bowl
Mix to combine
Add 500ml water and mix well
Remove coals from fire to the side for the damper to cook on
Place trivet inside camp oven
Scrunch up some baking paper and line the top of your trivet inside the camp oven
Place mixture on top of baking paper
Place camp oven on coals and cook for approx 10 minutes
Add coals to top of camp oven lid and cook for approx 30 minutes or until golden brown
Remove damper from camp oven to a chopping board
Slice damper and enjoy!
Tips & Hints:
Damper is cooked when it sounds hollow when tapped
Spread damper with soften butter and any topping you desire (golden syrup, hot honey - see recipe, jam etc.)
Why not turn it into lunch and make it a gourmet sandwich or dip it into soup on those chilly days
Rosemary and Olive Damper
Ingredients:
4 cups of self-raising flour
2 Tbs powered milk
2 tsp baking powder
1 jar olives, chopped
3 sprigs of fresh rosemary, leaves removed
Salt & pepper to season
500ml water
Method:
Add all dry ingredients in a bowl
Mix to combine
Add 500ml water and mix well
Remove coals from fire to the side for the damper to cook on
Place trivet inside camp oven
Scrunch up some baking paper and line the top of your trivet inside the camp oven
Place mixture on top of baking paper
Place camp oven on coals and cook for approx 10 minutes
