Spicy Baked Beans
Serves: approx. 4 people
Ingredients:
2 tsp minced garlic
2 chorizo, diced
2 tins of 4 bean mix
2 tbs tomato paste
1 cup chicken stock
2 cups of tomato passata
1 tsp EACH: paprika and cumin
1/4 tsp cayenne pepper
Salt and pepper to season
Olive oil, as required
1 cup of cheddar cheese, grated
Method:
Heat oil in a saucepan or camp oven
Add garlic and chorizo, cook 3 minutes or until chorizo is golden brown
Add beans and tomato paste, stir until combined
Add chicken stock and tomato passata, stir until combined
Add spices and season with salt and pepper
Simmer for 20 minutes
Serve into bowls and top with cheese
Add toast on the side, enjoy!
Tips & Hints:
Serve with damper
Use any type of tin beans (e.g. cannellini beans)
Put lid on the pan after adding cheese and allow the cheese to go gooey
Remove cheese, if you wish
Use left over bean mix to make toasties for another meal
