Spicy Baked Beans

Serves: approx. 4 people

Ingredients:

  • 2 tsp minced garlic

  • 2 chorizo, diced

  • 2 tins of 4 bean mix

  • 2 tbs tomato paste

  • 1 cup chicken stock

  • 2 cups of tomato passata

  • 1 tsp EACH: paprika and cumin

  • 1/4 tsp cayenne pepper

  • Salt and pepper to season

  • Olive oil, as required

  • 1 cup of cheddar cheese, grated

Method:

  • Heat oil in a saucepan or camp oven

  • Add garlic and chorizo, cook 3 minutes or until chorizo is golden brown

  • Add beans and tomato paste, stir until combined

  • Add chicken stock and tomato passata, stir until combined

  • Add spices and season with salt and pepper

  • Simmer for 20 minutes

  • Serve into bowls and top with cheese

  • Add toast on the side, enjoy!

Tips & Hints:

  • Serve with damper

  • Use any type of tin beans (e.g. cannellini beans)

  • Put lid on the pan after adding cheese and allow the cheese to go gooey

  • Remove cheese, if you wish

  • Use left over bean mix to make toasties for another meal
