Overnight Peach Porridge

Serves: approx. 1 person (1 jar)

Ingredients:

  • 1 cup oats

  • 1 tbs chia seeds

  • 1/3 cup coconut yogurt

  • 1 cup oat milk

  • 1/3 cup maple syrup

  • 1 peach, diced

  • 1 tbs brown sugar

  • squeeze of lemon juice

  • 1/4 tsp cinnamon

  • 1/4 tsp nutmeg

Method:

  • In a frying pan, add peach, cinnamon, nutmeg, brown sugar and lemon juice, cook until softened

  • In a jar, add remaining ingredients, shake to combine

  • Top jar with peach mixture

  • Refrigerate overnight, enjoy!

Tips & Hints:

  • Add banana or other fruits instead of peaches

  • Substitute yogurt and milk with your favourite options
