Overnight Peach Porridge
Serves: approx. 1 person (1 jar)
Ingredients:
1 cup oats
1 tbs chia seeds
1/3 cup coconut yogurt
1 cup oat milk
1/3 cup maple syrup
1 peach, diced
1 tbs brown sugar
squeeze of lemon juice
1/4 tsp cinnamon
1/4 tsp nutmeg
Method:
In a frying pan, add peach, cinnamon, nutmeg, brown sugar and lemon juice, cook until softened
In a jar, add remaining ingredients, shake to combine
Top jar with peach mixture
Refrigerate overnight, enjoy!
Tips & Hints:
Add banana or other fruits instead of peaches
Substitute yogurt and milk with your favourite options
